What is KAISEKI, and why try it?

The discerning few who have had a chance to be intimate with the crown of Japanese cuisine, KAISEKI food, gush effervescently of their senses being satiated by an exquisite meal. A meal that not just explores tastes but textures and appearance is nigh a medium of visual art, unparalleled in the culinary world. The notion of cultural harmony, so quintessentially Japanese, is exhibited with an almost fanatical need for perfection and an innate understanding of seasonal ingredients to create an explosion of flavors and textures in the partakers tongue and mind.

At Shigematsu, we would like to introduce this secret to you. Our chef Ryozo Shigematsu will be taking you through an introductory journey to Washoku, creating a gastronomical spectacle for multiple senses and letting the audience in on a secret that has been designated as a UNESCO world cultural heritage yet unknown to the rest of the world.

The meal I had a Shigematsu was the best I’ve had in Japan. I couldn’t have imagined how beautifully arranged food can be. My lunch experience was not only a delightful to eat, with different flavours for each course, but also a superb visual pleasure.

What an experience! I never thought food could look so amazing. After a week of (almost only) sushi, ramen and o-nigiri for lunch, my meal at Shigematsu really showed me how diverse Japanese cuisine is. I loved it!

To be honest, I’ve always thought Chinese food is the best.  But my visit to Shigematsu proved me wrong! The food they served was so beautiful and delicious. It easily beats most dishes I had back home!
